Fix It Soup
Who doesn't love a big bowl of soup when it starts to get cooler outside? It's my ultimate comfort food! Unfortunately it's hotter than satan's house cat right now, but that won't keep me from fixin' my Grandma's vegetable soup. Her soup makes everything better and can fix it all even if I have the air cranked up enough to throw snowballs. I'm serious about this soup making everything better. My Mother-In-Law isn't even a big fan of soup and she likes this one! I'm telling y'all it is just that good and can fix most anything. Had a bad day at work- this soup will fix it. Somebody break up with you- this soup will fix it. Looked like a busted can of biscuits in your clothes- this soup will not fix it, but who cares with soup this good! The greatest thing about this recipe is you can cook it on the stove in about 30 minutes (if you're using canned vegetables) or in a crockpot if you're going to be gone all day and you can freeze the leftovers! Depending on time and resources you can use fresh or canned vegetables. I've used both and they are both equally good! Pair it with cheese toast and snuggle up on the couch with a good movie. Today I'm going to share the time and budget friendly version (my Momma will be upset since this isn't the "fresh" version.) Remember you can use whatever veggies you want to use, but this ingredient list will have what I put in my soup.
Ingredients:
- 1lb of ground beef
- 2 cans of corn
- 2 cans of diced potatoes
- 2 cans of cabbage
- 2 cans of sliced carrots
- 2 can of green beans (no salt added)
- 1lb can of diced tomatoes
- 1 container (2lb) of low sodium beef broth
- 2 heaping tablespoons of minced garlic
- 1/2 tsp of salt
- 1 tsp of pepper
Directions:
1. Find the largest pot you can!
2. Brown your meat and then drain off excess grease
3. Add all of you vegetables
4. Add broth till your vegetables and meat are covered
5. Add garlic, salt, and pepper
6. Stir it well and let it simmer till it's piping hot (told you this was the quick version)
